Meet Your Lettuce : Kale

You know WHERE your food comes from and you know WHO your food comes from, but what about the WHAT?  We know that you know greens are good for you but when it comes to choosing them, how does one decide what to eat?  WHAT matters?  WHAT do these greens contain?
Every green is unique in flavor, texture, and nutritional value and we’d like to make you an expert in all things farm-fresh and yummy.  This is YB Farm has designated every Wednesday to teaching you all about our produce, what it tastes like, where it comes from, and why you should get some in your belly ASAP.  Welcome!

kaleAh, Kale.  The star the the show.  The king of all super greens.  And for good reason!  Not only is kale crunchy and amiable, flavorful and unique, but it also contains an incredible number of nutrients.

Kale is believed to have originated in China, traveling to Europe by way of celtic wanderers.  It was the most widely eaten green in Europe for thousands of years, being easy to grow and versatile.  It fell out of the public eye for another thousand years, being though of moreso as a garnish.  That thought is no more, however!  We at YB Farm know that when it comes to super greens, kale is the king.
