Meet Your Lettuce : Bok Choy

You know WHERE your food comes from and you know WHO your food comes from, but what about the WHAT?  We know that you know greens are good for you but when it comes to choosing them, how does one decide what to eat?  WHAT matters?  WHAT do these greens contain?

Our first featured lettuce will be the ever-ignored cruciferous Bok Choy, a super green so crunchy and dynamic that if you haven’t tried it you should give us a call and order a bunch RIGHT NOW.

Often referred to as “Chinese Cabbage”, Bok Choy is one of the most super of super greens as it packs quite a nutritional punch. It contains the following good things:

Dietary Protein
Fiber
Iron
Phosphorous
Vitamin A
Magnesium
Zinc
Vitamin K
Vitamin C
Vitamin B-6

For one lettuce, this is quite the list!  Bok Choy is not only nutritious.  It’s also a delicious addition to almost any meal as well.  Got a soup that needs greens?  Throw it in!  Out of bread but in need of a holder for your sandwich meats?  Two Bok Choy leaves work just splendidly!  Throw it in a stir fry!  Steam it!
